Pumpkin Mousse Gateau
A Tallant House signature cake. Pumpkin mousse, hazelnut dacquoise, candied cranberries, banded with honey spice cake, and topped with a surprise layer of bittersweet chocolate ganache, and cinnamon whipped cream. Simply delicious!

Hazelnut Truffle Torte
Layers of hazelnut dacquise, hazelnut sponge cake, hazelnut mousse and dark chocolate ganache.
Chocolate Passion Gateau

A Tallant House signature cake. Light, luscious bittersweet chocolate mousse, a layer of passion fruit cream and two layers of chocolate almond sponge cake, coated with bittersweet ganache. Decorated with more chocolate and gold leaf.

Pear Caramel Delice
Caramel mousse, pear Bavarian and sauteed pears, with almond sponge cake.

Dome aux Epices
Spice Cake, Spice Bavarian and dark chocolate in a dome, covered with shiny chocolate glaze and surrounded with almond macaroons. Available in 8" dome only.

Rhum Island
Chocolatine cream surrounds an island of rum Bavarian with rum soaked golden raisins on a layer of chocolate sponge.

Grand Cranberry Gateau
Two layers of almond sponge cake smothered in cranberry Grand Marnier mousse and dotted with candied cranberries.

Pommes Normandy
Vanilla sponge cake, caramelized apples, and Calvados Bavarian dome. Available in 8" dome only.

Spanish Orange Gateau
Two layers of chocolate sponge cake smothered in orange mousse, with a layer of orange cream, then surrounded and topped with fresh candied orange sliced. Yum yum!

 

Mimosa:
A layer each of orange mousse and champagne Bavarian with two layers of vanilla sponge cake.

Lemon Tart:
Fresh house made silky smooth lemon curd
in a sweet tart shell. Your choice of meringue or candied lemons on top.

Merlot Pear Tart
Silky vanilla scented house cultured mascarpone cheese topped with
a layer of merlot poached pears.

Linzer Tart
Apricots baked in a shell of classic hazelnut crust.

French Apple Tart
Thin sliced apples fanned and baked to perfection.


Cranberry, Almond and Caramel Tart

Sliced almonds and cranberries baked in caramel.

Classic Pecan Tart
Pecans baked in whiskey laced custard.

Bordalou
Pear almond tart, a French classic. For variety, try it with hazelnut or pistachio filling.

Pear Brown Butter Tart
Sliced pears fanned over nutty flavored brown butter filling. Simple yet divine!

Apple Tart
Thick sliced apples fanned on a bed of almond cream.
